Chicken Celery Soup


Ingredients:
2 cups macaroni, uncooked
½ k. chicken breast
6 cups water
1 cup onion, chopped
Celery leaves from stalks
1 med carrot, quartered
2 tsps. peppercorns
1 tsp. cornstarch
3 stalks celery, chopped
1 tsp. salt
½ tsp. pepper
2 cups full cream Milk

Directions:
Cook macaroni according to package directions; set aside.
Boil chicken with onion, celery leaves, carrots and peppercorns until tender.
Strain and set aside stock.
Debone chicken and flake; set aside.
Dissolve cornstarch in ½ cup chicken stock and bring to a boil; add celery stalks, salt, pepper, diluted cornstarch and milk.
Reduce heat; add cooked chicken and macaroni.
Simmer for a few minutes, or until the broth is slightly thickened.
Correct seasonings.
Serve hot.
